Biryani Entrées
Biryani dishes range from medium to very hot, and consist of vegetables, meat or seafood cooked into a curry with medium gravy in a variety of spices like cinnamon, cardamom, cloves, pepper and saffron. The mixture is then layered in a large dish with fragrant long-grained rice and slow-cooked for several hours. This lets the delicious juices from the meat and vegetables mix with the spices and saturate the rice. Biryani dishes are Mughlai in origin and are prepared differently in different regions of India.
